Ingredients

  • 2 oz London dry gin
  • 1/2 oz yuzu juice
  • 3/4 oz simple syrup
  • 1 oz aquafaba (or egg whites)
  • 4 Thai basil leaves
  • Peychaud's bitters

Instructions

  1. Muddle Thai basil leaves into the simple syrup in a shaker.
  2. Add London dry gin, yuzu juice, and aquafaba to the shaker.
  3. Dry shake the mixture for about 10 seconds.
  4. Add 3 ice cubes and shake vigorously for about 10 more seconds.
  5. Strain the cocktail into a rocks glass filled with ice.
  6. Top the cocktail with soda until the foam rises slightly above the edge of the glass.
  7. Garnish with a Thai basil leaf and a few drops of Peychaud's bitters.
