Ingredients

  • 2 ripe fuyu persimmons, quartered
  • 1/2 cup water
  • 2 tablespoons brown sugar
  • 2 oz rye or bourbon
  • 2 tablespoons persimmon puree
  • 4 dashes orange bitters
  • Seltzer water
  • Rosemary, for garnish (optional)
  • Fresh cranberries, for garnish (optional)

Instructions

  1. In a blender or food processor, blend persimmons, water, and brown sugar until smooth, adjusting the consistency with more water if needed.
  2. Fill a short cocktail glass with ice.
  3. Add 2 tablespoons persimmon puree and the remaining ingredients to the glass.
  4. Gently stir to combine.
