Ingredients

  • 2 ripe fuyu persimmons, tops removed and quartered
  • 1/2 cup water
  • 2 tablespoons brown sugar
  • 2 ounces rye or bourbon
  • 2 tablespoons persimmon puree
  • 4 shakes orange bitters
  • Seltzer water
  • Rosemary, for garnish, optional
  • Fresh cranberries, for garnish, optional

Instructions

  1. Place persimmons, water, and brown sugar in a blender or food processor.
  2. Blend until smooth, adjusting the consistency with water if needed.
  3. Fill a short cocktail glass with ice.
  4. Add 2 tablespoons of persimmon puree and the remaining ingredients.
  5. Gently stir to combine.
  6. Garnish with optional rosemary and cranberries.
  7. Adjust sweetness by adding more puree if desired.
