Ingredients
- 1 tbsp loose leaf white tea (or 1 sachet tea bag)
- 1 cup water
- 1 tbsp honey
- 2 slices lemon
- 1.50 oz vodka (or white rum or gin)
- 3 sprigs fresh thyme (or mint if preferable)
- 2 cucumber ribbons (optional: a few slices to muddle)
- ice
- 0.50 cup sparkling water (alternatively use sparkling wine or champagne)
Instructions
- Boil the water and steep the white tea for up to 5 minutes. Set aside to cool slightly.
- In a cocktail shaker, muddle 1 lemon slice, 1 sprig of thyme (or mint), and honey with the vodka (plus extra cucumber if desired).
- Add the brewed tea and plenty of ice to the shaker. Shake well.
- Place ice and cucumber ribbons in a cocktail glass.
- Pour the cocktail mixture over the ice and cucumber, then give it a quick stir.
- Top with sparkling water and garnish with the extra thyme and lemon.
