Ingredients

  • 1 tbsp loose leaf white tea (or 1 sachet tea bag)
  • 1 cup water
  • 1 tbsp honey
  • 2 slices lemon
  • 1.50 oz vodka (or white rum or gin)
  • 3 sprigs fresh thyme (or mint if preferable)
  • 2 cucumber ribbons (optional: a few slices to muddle)
  • ice
  • 0.50 cup sparkling water (alternatively use sparkling wine or champagne)

Instructions

  1. Boil the water and steep the white tea for up to 5 minutes. Set aside to cool slightly.
  2. In a cocktail shaker, muddle 1 lemon slice, 1 sprig of thyme (or mint), and honey with the vodka (plus extra cucumber if desired).
  3. Add the brewed tea and plenty of ice to the shaker. Shake well.
  4. Place ice and cucumber ribbons in a cocktail glass.
  5. Pour the cocktail mixture over the ice and cucumber, then give it a quick stir.
  6. Top with sparkling water and garnish with the extra thyme and lemon.
