Ingredients

  • 1 cup seedless watermelon, cubed
  • 2 fl oz lemon-lime soda
  • 1.50 tbsp fresh lime juice
  • 1 tsp rum extract
  • 2 tsp fresh mint leaves, minced

Instructions

  1. Puree the watermelon in a blender and pour 2 cups of puree into an ice cube tray; freeze until solid.
  2. Reserve the remaining watermelon puree in the refrigerator.
  3. When ready to make the mojitos, blend the frozen watermelon puree cubes, refrigerated watermelon puree, soda, lime juice, and rum extract in a blender until smooth.
  4. Stir in the fresh mint and pour into a glass.
  5. Garnish with additional fresh mint, if desired.
