Ingredients

  • 1 1/2 cups Almond milk (unsweetened)
  • 2.50 oz Cashew nuts (raw)
  • 1/3 cup Water
  • 3 tbsp Agave
  • 1/2 tsp Almond extract
  • 1 pinch Ground nutmeg
  • 2 pinches + 2 tsp for decoration Ground cinnamon
  • 1 - 2 for decoration cinnamon sticks
  • 2-3 Anise stars
  • 4-5 Cardamom pods
  • 2 tbsp Rum (optional)

Instructions

  1. Place the raw cashews in a bowl and pour 1/3 cup of boiling water over them. Let the cashews soak for 30 minutes or until soft, then blend into a smooth puree.
  2. In a saucepan, heat the almond milk with cinnamon, anise stars, and cardamom pods. Bring to a boil, then simmer on low heat for 5 minutes. Let it cool.
  3. Remove the cinnamon, anise, and cardamom from the milk, then pour the milk into a blender.
  4. Add the blended cashews, almond extract, agave, nutmeg, cinnamon, and rum (optional) to the blender. Blend for 3-4 minutes at medium speed.
  5. Once blended, pour the eggnog into a cup, decorate with ground cinnamon, and serve with cinnamon sticks.
