Ingredients
- 1 1/2 cups unsweetened Almond milk
- 3 tbsp raw Cashew nuts
- 1/3 cup Water
- 3 tbsp Agave
- 1/2 tsp Almond extract
- 1 pinch Ground nutmeg
- 2 pinches Ground cinnamon
- 1-2 cinnamon sticks for decoration
- 2-3 Anise stars
- 4-5 Cardamom pods
- 2 tbsp Rum (optional)
Instructions
- Place raw cashews in a bowl and pour 1/3 cup of boiling water over them. Let them sit for 30 minutes until soft, then blend into a smooth puree.
- In a saucepan, bring almond milk, cinnamon stick, anise stars, and cardamom pods to a boil, then simmer on low heat for 5 minutes. Let it cool.
- Remove the spices from the milk and pour it into a blender. Add the blended cashews, almond extract, agave, nutmeg, cinnamon, and rum (if using). Blend for 3-4 minutes at medium speed.
- Once blended, the vegan eggnog will be moderately thick and aromatic. Decorate glasses with ground cinnamon, pour the eggnog, and serve with cinnamon sticks.
