Ingredients

  • 2 oz Alipús San Luis Del Rio Mezcal
  • 3/4 oz lime juice (strained)
  • 3/4 oz gum syrup
  • 1/2 oz tangerine juice (strained)
  • 1/2 oz egg white
  • 1/2 tsp Bittermens New England Spiced Cranberry Bitters
  • 5 drops saline (4 parts water: 1 part salt)
  • Grated cinnamon, for garnish

Instructions

  1. Combine mezcal, lime juice, gum syrup, tangerine juice, egg white, spiced cranberry bitters, and saline in a mixing tin.
  2. Flash blend without ice for 5 seconds.
  3. Add 12 ounces of crushed ice to the tin and flash blend for 5 seconds.
  4. Double strain the mixture into a chilled goblet (10 ounces).
  5. Dust with grated cinnamon to serve.
