Ingredients

  • 1 tablespoon honey
  • 1 tablespoon hot water
  • 2 ounces full-fat coconut milk
  • 2 ounces white tequila
  • 1 ounce lime juice
  • Salted toasted coconut rim (recipe below)
  • Lime slice (for garnish)
  • 1/4 cup desiccated coconut
  • 1 teaspoon sea salt
  • 1 teaspoon honey

Instructions

  1. Prepare the toasted coconut salt by toasting desiccated coconut in a pan until golden brown, then mix in the sea salt.
  2. Brush the rim of a glass with honey and dip it into the toasted coconut salt.
  3. In a small cup, mix the honey with hot water.
  4. Place a handful of ice in a cocktail shaker or jar.
  5. Add the honey-water mixture, coconut milk, tequila, and lime juice to the shaker, and shake well.
