Ingredients

  • 1.50 oz pineapple juice
  • 2 oz rum (Havana Club Añejos 3 Años recommended)
  • 2 oz coconut cream
  • 0.50 oz palm sugar syrup
  • 1/2 cup crushed ice
  • Pineapple slices for garnish
  • Toasted dried coconut slices for garnish

Instructions

  1. Prepare fresh pineapple juice or use store-bought if fresh pineapples are not available.
  2. Make coconut cream if using fresh coconuts, or use canned coconut cream if preferred.
  3. In a blender, combine the pineapple juice, coconut cream, rum, sugar syrup, and crushed ice. Blend for about 20 seconds or until smooth.
  4. Pour the mixture into a 12 oz tumbler or highball glass.
  5. Garnish with fresh pineapple wedges and a few toasted dried coconut pieces.
