Ingredients

  • 2 oz Bundaberg Pineapple & Coconut
  • 0.67 oz Dark Rum
  • 2 Pineapple pieces (1.5 x 1.5 inches)
  • Pinch of Fresh Mint
  • Fresh Cream (to float on top)
  • Mint Sprig for garnish
  • Pineapple Leaf for garnish

Instructions

  1. Muddle the pineapple pieces in a shaker.
  2. Add dark rum and lime juice to the shaker.
  3. Shake the ingredients well, then strain the mixture into a glass.
  4. Top with Bundaberg Pineapple & Coconut and carefully float fresh cream on top.
  5. Garnish the cocktail with a mint sprig and a pineapple leaf.
