Ingredients
- 3 tbsp coconut cream
- 3/4 cup coconut milk
- 1/4 cup pineapple juice
- 2 tbsp granulated sugar (or to taste)
- 1 cup ice
- 1 1/2 oz rum
- 1 tbsp pineapple juice
- 1/3 cup heavy whipping cream
Instructions
- In a medium-sized bowl, use an electric mixer to beat the pineapple juice and heavy cream until soft peaks form, about 4-5 minutes. Set aside for the optional whipped topping.
- In a blender, combine coconut cream, coconut milk, pineapple juice, rum, sugar, and ice. Blend until smooth with no large pieces of ice remaining.
- Pour the mixture into a cocktail glass.
