Ingredients

  • 3 tbsp coconut cream
  • 3/4 cup coconut milk
  • 1/4 cup pineapple juice
  • 2 tbsp granulated sugar (or to taste)
  • 1 cup ice
  • 1 1/2 oz rum
  • 1 tbsp pineapple juice
  • 1/3 cup heavy whipping cream

Instructions

  1. In a medium-sized bowl, use an electric mixer to beat the pineapple juice and heavy cream until soft peaks form, about 4-5 minutes. Set aside for the optional whipped topping.
  2. In a blender, combine coconut cream, coconut milk, pineapple juice, rum, sugar, and ice. Blend until smooth with no large pieces of ice remaining.
  3. Pour the mixture into a cocktail glass.
