Tiramisu Martini
A delectable cocktail inspired by the flavors of tiramisu, featuring layers of coffee-soaked sponge fingers and a creamy mascarpone topping, served in small martini glasses.
Ingredients
- 1/4 cup espresso coffee (or strong instant coffee)
- 1 tablespoon coffee liqueur
- 1 savoiardi biscuit (fine sponge finger)
- 1 large egg white
- 2 oz mascarpone cheese
- 1/2 tablespoon honey
- 1/2 tablespoon marsala
- approximately 1/2 teaspoon good-quality cocoa powder
Instructions
- Brew the espresso and pour it into a heatproof jug. Add the coffee liqueur and allow it to cool for about 10 minutes.
- Break the savoiardi sponge finger into small pieces and place them into a small martini glass.
- Pour the cooled espresso mixture over the sponge fingers, ensuring they are well soaked.
- Using an electric hand-held whisk, beat the egg white until soft peaks form, and set aside.
- In a separate bowl, combine the mascarpone and honey. Beat until smooth, then slowly beat in the Marsala.
- Fold in the beaten egg white in thirds, then spoon this mixture over the soaked savoiardi in each glass, creating a swirly peak at the top.
- Refrigerate the glasses for at least 20 minutes, or up to 24 hours, before serving. Dust with cocoa just before serving.
