Ingredients

  • 1/4 cup espresso coffee (or strong instant coffee)
  • 1 tablespoon coffee liqueur
  • 1 savoiardi biscuit (fine sponge finger)
  • 1 large egg white
  • 2 oz mascarpone cheese
  • 1/2 tablespoon honey
  • 1/2 tablespoon marsala
  • approximately 1/2 teaspoon good-quality cocoa powder

Instructions

  1. Brew the espresso and pour it into a heatproof jug. Add the coffee liqueur and allow it to cool for about 10 minutes.
  2. Break the savoiardi sponge finger into small pieces and place them into a small martini glass.
  3. Pour the cooled espresso mixture over the sponge fingers, ensuring they are well soaked.
  4. Using an electric hand-held whisk, beat the egg white until soft peaks form, and set aside.
  5. In a separate bowl, combine the mascarpone and honey. Beat until smooth, then slowly beat in the Marsala.
  6. Fold in the beaten egg white in thirds, then spoon this mixture over the soaked savoiardi in each glass, creating a swirly peak at the top.
  7. Refrigerate the glasses for at least 20 minutes, or up to 24 hours, before serving. Dust with cocoa just before serving.
