Ingredients
- 1/3 cup espresso coffee (or strong instant coffee)
- 1 tablespoon coffee liqueur
- 1 Savoiardi biscuit (fine sponge finger), broken into 4 pieces
- 2 large egg whites
- 1 cup mascarpone cheese
- 2 teaspoons honey
- 2 tablespoons Marsala
- 1 teaspoon good-quality cocoa powder
Instructions
- Brew the espresso and let it cool, then stir in the coffee liqueur.
- Place the broken Savoiardi pieces into a small martini glass and pour the cooled espresso mixture over them.
- Using an electric hand-held whisk, beat the egg whites until they form soft peaks.
- In a separate bowl, whisk together the mascarpone, honey, and Marsala until smooth.
- Gently fold the beaten egg whites into the mascarpone mixture.
- Spoon the mascarpone mixture over the soaked Savoiardi in each glass, creating a swirly peak at the top.
- Chill the glasses in the fridge for at least 20 minutes and up to 24 hours.
- Before serving, dust the tiramisini with cocoa powder using a fine-mesh strainer.
