Ingredients

  • 1/3 cup espresso coffee (or strong instant coffee)
  • 1 tablespoon coffee liqueur
  • 1 Savoiardi biscuit (fine sponge finger), broken into 4 pieces
  • 2 large egg whites
  • 1 cup mascarpone cheese
  • 2 teaspoons honey
  • 2 tablespoons Marsala
  • 1 teaspoon good-quality cocoa powder

Instructions

  1. Brew the espresso and let it cool, then stir in the coffee liqueur.
  2. Place the broken Savoiardi pieces into a small martini glass and pour the cooled espresso mixture over them.
  3. Using an electric hand-held whisk, beat the egg whites until they form soft peaks.
  4. In a separate bowl, whisk together the mascarpone, honey, and Marsala until smooth.
  5. Gently fold the beaten egg whites into the mascarpone mixture.
  6. Spoon the mascarpone mixture over the soaked Savoiardi in each glass, creating a swirly peak at the top.
  7. Chill the glasses in the fridge for at least 20 minutes and up to 24 hours.
  8. Before serving, dust the tiramisini with cocoa powder using a fine-mesh strainer.
