Ingredients

  • 3.50 fl oz espresso coffee (or strong instant coffee)
  • 2 tbsp coffee liqueur
  • 4 ladyfinger cookies
  • 2 large egg whites
  • 8.80 oz mascarpone cheese
  • 2 tbsp honey
  • 2 tbsp Marsala wine
  • Approximately 1 tsp good-quality cocoa powder

Instructions

  1. Brew the espresso and allow it to cool, then mix in the coffee liqueur.
  2. Break the ladyfinger cookies into small pieces and distribute them into martini glasses.
  3. Pour the cooled espresso mixture over the ladyfinger pieces, ensuring they are fully soaked.
  4. Using an electric hand-held whisk, beat the egg whites until they form soft peaks, then set aside.
  5. In a separate bowl, combine the mascarpone and honey, then beat until smooth. Slowly beat in the Marsala.
  6. Fold the egg whites into the mascarpone mixture in thirds, then spoon the mixture over the soaked ladyfingers in each glass.
  7. Refrigerate the glasses for at least 20 minutes or up to 24 hours.
  8. Before serving, dust the tops with cocoa powder using a fine-mesh strainer.
