Ingredients

  • 1 cup water
  • 1 cup demerara sugar (or Turbinado or light brown sugar)
  • 0.25 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground allspice
  • 1 tsp grated dark chocolate (optional)
  • Ice (1 large cube and small regular cubes)
  • 2.50 oz Teeling Small Batch Irish whiskey
  • 0.50 oz spice syrup
  • 2 dashes Angostura bitters
  • Cinnamon stick, for garnish

Instructions

  1. In a small saucepan over medium heat, combine water, sugar, cinnamon, cloves, allspice, and chocolate if using, stirring until mixed.
  2. Bring to a boil and cook at a rapid boil for 30 seconds, then remove from the heat and let cool completely.
  3. Add the large ice cube to a rocks glass.
  4. In a mixing glass, add ice cubes, whiskey, spice syrup, and bitters, and stir briefly to combine.
  5. Strain the mixture into the rocks glass and garnish with the cinnamon stick.
