Ingredients
- 1 large, juicy lemon
- 1 sprig fresh thyme
- 1 tablespoon mild honey
- 2 ounces good gin
- 1 ounce dry vermouth
Instructions
- Heat a cast iron skillet over medium-high heat until very hot.
- Cut the lemon in half and slice a 1/4-inch round from one half.
- Place the lemon halves and slice into the hot skillet, cut sides down, and cook for 3-4 minutes until charred.
- Remove the lemon and add the thyme sprig to the skillet, cook for about a minute, then set aside to cool.
- Squeeze the juice from the lemon halves through a fine-mesh sieve into a small bowl.
- Measure out 1 1/2 ounces of juice, saving any extra for later use.
- Dissolve the honey in the lemon juice.
- Fill a cocktail shaker with ice and pour in the lemon juice mixture, gin, and vermouth. Shake well.
- Place a few ice cubes into a glass and strain the drink into it.
- Garnish with the charred lemon slice and thyme sprig. (Bruise the thyme with your fingers to release its flavors into the drink.)
