Tarragon Berry Vinegar Spritz

Ingredients
- 1 cup raspberries
- 3 tablespoons sugar
- 4 sprigs fresh tarragon
- 3 tablespoons red-wine vinegar
- Ice
- 1/4 cup chilled sparkling water
Instructions
- In a large nonreactive pot, combine raspberries, sugar, and tarragon. Let it sit at room temperature, stirring occasionally, for 1 hour.
- Cook the raspberry mixture over medium heat until it starts to simmer, about 5 minutes. Then, add the vinegar and continue cooking until it comes to a bare simmer, about 3 to 5 minutes. Remove from heat.
- Cover the pot with cheesecloth or a clean kitchen towel and let it stand at room temperature for 24 hours.
- Remove and discard the tarragon, then strain the mixture into an airtight container. Refrigerate the shrub until cold, for at least 1 hour and up to 1 month.
- To make each drink, fill a glass with ice, add 1 1/2 tablespoons of shrub, and top with sparkling water. Stir once and garnish with fresh berries and tarragon, if desired.
