Ingredients
- 1 cup raspberries
- 1.50 tablespoons sugar
- 8 sprigs fresh tarragon
- 1.50 tablespoons red-wine vinegar
- Ice
- 0.50 cup chilled sparkling water
Instructions
- In a large nonreactive pot, combine raspberries, sugar, and tarragon. Let it sit at room temperature, stirring occasionally, for 1 hour.
- Cook the raspberry mixture over medium heat until it starts to simmer, about 5 minutes. Then add vinegar and continue cooking until it comes to a bare simmer, approximately 3 to 5 minutes. Do not let it boil.
- Remove from heat, cover with cheesecloth or a clean kitchen towel, and let it stand at room temperature for 24 hours.
- Discard the tarragon and strain the mixture into an airtight container. Refrigerate until cold, at least 1 hour, and up to 1 month.
- To make each drink, fill a glass with ice, add 1 1/2 tablespoons shrub, and top with sparkling water. Stir once and garnish with fresh raspberries and tarragon, if desired.
