Ingredients
- 10 pitted Medjool dates
- 2 cups water
- 1 cup firmly packed dark brown sugar
- 1 tbsp coarse ground black pepper
- 1/2 tsp crushed rosemary
- 1 tbsp cornstarch
- 1/2 cup ice
- 2 tbsp Black Pepper Date Simple Syrup
- 2 tbsp (1 oz) dark rum
- 1 tbsp (1/2 oz) elderflower liqueur
- 4 1/2 tsp fresh lime juice
Instructions
- In a medium saucepan, bring dates, water, brown sugar, black pepper, and rosemary to a simmer, stirring to dissolve sugar.
- Strain the mixture through a fine mesh sieve, being careful not to press too much of the pulp through the strainer.
- In a small bowl, mix 2 tablespoons of the strained date mixture with cornstarch until well blended.
- Return the remaining strained date mixture back to the saucepan. Stir in the cornstarch mixture with a whisk until well blended. Bring to a simmer and cook for 1 minute, then remove from heat and cool slightly.
- Store the syrup in a tightly covered, clean container in the refrigerator until ready to use.
- For 1 cocktail, place ice in a cocktail shaker and add Black Pepper Date Simple Syrup, rum, elderflower liqueur, and lime juice. Shake until well mixed and chilled.
- Strain into a beverage glass and garnish with a sprig of fresh rosemary, if desired. Serve immediately.
