Ingredients

  • 10 pitted Medjool dates
  • 2 cups water
  • 1 cup firmly packed dark brown sugar
  • 1 tbsp coarse ground black pepper
  • 1/2 tsp crushed rosemary
  • 1 tbsp cornstarch
  • 1/2 cup ice
  • 2 tbsp Black Pepper Date Simple Syrup
  • 2 tbsp (1 oz) dark rum
  • 1 tbsp (1/2 oz) elderflower liqueur
  • 4 1/2 tsp fresh lime juice

Instructions

  1. In a medium saucepan, bring dates, water, brown sugar, black pepper, and rosemary to a simmer, stirring to dissolve sugar.
  2. Strain the mixture through a fine mesh sieve, being careful not to press too much of the pulp through the strainer.
  3. In a small bowl, mix 2 tablespoons of the strained date mixture with cornstarch until well blended.
  4. Return the remaining strained date mixture back to the saucepan. Stir in the cornstarch mixture with a whisk until well blended. Bring to a simmer and cook for 1 minute, then remove from heat and cool slightly.
  5. Store the syrup in a tightly covered, clean container in the refrigerator until ready to use.
  6. For 1 cocktail, place ice in a cocktail shaker and add Black Pepper Date Simple Syrup, rum, elderflower liqueur, and lime juice. Shake until well mixed and chilled.
  7. Strain into a beverage glass and garnish with a sprig of fresh rosemary, if desired. Serve immediately.
