Ingredients

  • 1/2 cup brown sugar
  • 3/4 cup water
  • 1 tablespoon tamarind paste
  • 1 lime, cut into wedges
  • Sugar, for rimming the glass
  • 3 ounces bourbon
  • 4 mint leaves
  • 1 ounce tamarind simple syrup
  • For garnish: a lime wheel and a mint sprig

Instructions

  1. In a small saucepan, combine the brown sugar and water. Bring to a boil, stirring occasionally, and let it simmer for a minute or two until the sugar is dissolved. Remove from heat, and stir in the tamarind paste. Allow the tamarind simple syrup to cool completely in the refrigerator.
  2. Prepare the cocktail glass by running a lime wedge around the rim and then dipping it in sugar to coat the rim.
  3. Squeeze the remaining lime wedges into the glass of a cocktail shaker.
  4. Add the mint leaves to the cocktail shaker and gently muddle to release their flavor.
  5. Pour in the bourbon and tamarind simple syrup, fill the shaker with ice, and shake vigorously.
  6. Strain the cocktail into the prepared glass over ice, and garnish with a lime wheel and a sprig of mint.
