Ingredients
- 1/4 cup water
- 1 tablespoon sugar
- 1 tablespoon fresh rosemary leaves
- 3 stalks fresh rhubarb, diced
- 1 1/2 tablespoons fresh lemon juice
- 3 tablespoons white rum
- Ice
- Fresh rosemary sprig for garnish
Instructions
- In a small saucepan, simmer 1/4 cup water and 1 tablespoon sugar over medium heat until the sugar dissolves.
- Remove from heat and add fresh rosemary leaves, letting it steep for 5 minutes, then strain the syrup and let it cool.
- In a blender, combine diced rhubarb, 1 tablespoon lemon juice, 1 cup water, and 1 tablespoon sugar, and blend into a coarse puree.
- Strain the rhubarb puree through a fine-mesh strainer into a medium bowl, squeezing pulp to release as much liquid as possible, and refrigerate the resulting juice.
- Mix rhubarb juice, rosemary syrup, remaining lemon juice, and rum in a pitcher, stirring to combine.
- Serve in a glass filled with ice, garnished with a fresh rosemary sprig.
