Ingredients

  • 5 oz. White wine (Rosè or Sauvignon Blanc)
  • 3/4 cup Frozen watermelon cubes
  • 2-3 sprigs Cilantro
  • 3-4 Mint leaves
  • 1 tbsp Honey
  • 1/4 cup Water
  • 2 tbsp Freshly squeezed lime juice
  • Mint leaves for garnish

Instructions

  1. Pour the wine into ice cube trays and freeze until solid, for at least 8 hours or overnight.
  2. Cut the watermelon into cubes and spread them on a lined baking sheet, then freeze until solid, or overnight.
  3. In a pan, combine water and honey, add cilantro and mint leaves, and bring to a boil. Simmer on low heat for 15 minutes, then remove from heat and let it cool. Chill the syrup in the fridge for 15 minutes before using.
  4. Place the wine ice cubes, frozen watermelon, chilled simple syrup, and lime juice in a blender, and blend until smooth.
  5. Pour the mixture into a cocktail glass and garnish with fresh mint leaves.
