Ingredients
- 5 oz. White wine (Rosè or Sauvignon Blanc)
- 3/4 cup Frozen watermelon cubes
- 2-3 sprigs Cilantro
- 3-4 Mint leaves
- 1 tbsp Honey
- 1/4 cup Water
- 2 tbsp Freshly squeezed lime juice
- Mint leaves for garnish
Instructions
- Pour the wine into ice cube trays and freeze until solid, for at least 8 hours or overnight.
- Cut the watermelon into cubes and spread them on a lined baking sheet, then freeze until solid, or overnight.
- In a pan, combine water and honey, add cilantro and mint leaves, and bring to a boil. Simmer on low heat for 15 minutes, then remove from heat and let it cool. Chill the syrup in the fridge for 15 minutes before using.
- Place the wine ice cubes, frozen watermelon, chilled simple syrup, and lime juice in a blender, and blend until smooth.
- Pour the mixture into a cocktail glass and garnish with fresh mint leaves.
