Ingredients

  • 2 cardamom pods
  • 1 star anise
  • 2 teaspoons lime juice
  • 1 teaspoon caster sugar
  • 2 tablespoons dark rum
  • 2 teaspoons Grand Marnier
  • 2 tablespoons passionfruit juice
  • 1/2 eggwhite
  • Pulp from 1 passionfruit
  • Saffron threads (optional), to serve

Instructions

  1. Lightly crush the cardamom pods and star anise in a mortar and pestle.
  2. In a cocktail shaker, combine the crushed spices, lime juice, caster sugar, dark rum, Grand Marnier, passionfruit juice, eggwhite, and 1 teaspoon of cold water.
  3. Top the mixture with ice and shake until well combined.
  4. Place the passionfruit pulp in a martini glass.
  5. Strain the cocktail over the passionfruit pulp in the glass.
  6. Optionally, top with saffron threads before serving.
