Ingredients

  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 10 fresh mint leaves
  • 5 oz non-alcoholic cider or prosecco
  • 1 oz orange juice (or 2/3 oz triple sec)
  • 1-1.50 oz mint simple syrup
  • 1 lemon, thinly sliced
  • 1/4 cup sliced strawberries or mixed fresh or frozen berries
  • Optional: extra mint for garnish

Instructions

  1. In a small saucepan over medium heat, combine the water, sugar, and fresh mint. Stir until the sugar dissolves, then remove from the heat.
  2. Let the mixture rest for 10 minutes, then discard the mint and transfer the syrup to a container. Chill in the refrigerator.
  3. In a pitcher, mix the berries, orange juice, lemon, and 1 cup of the simple syrup. If using frozen berries, no need to thaw.
  4. If serving immediately, pour the cider or prosecco over the fruit and serve chilled. For later serving, prepare the fruit mixture up to 8-12 hours in advance, then add the sparkling beverage just before serving.
  5. Adjust sweetness by adding more simple syrup if desired.
  6. Serve the Summer Berry Fizz over ice, and garnish with extra mint leaves or fruit if desired. Enjoy!
