Ingredients

  • 3-4 saffron strands
  • 2 tablespoons sugar
  • 1 green cardamom pod, crushed
  • 1 tablespoon ground sumac
  • 3/4 cup chilled club soda or water
  • Ice

Instructions

  1. Grind the saffron with 2 tablespoons of sugar to a fine powder using a mortar and pestle.
  2. In a saucepan, combine water, sugar, crushed cardamom, and the saffron mixture, and bring to a simmer, stirring until the sugar dissolves.
  3. Remove from heat, stir in the sumac, cover, and let it steep for 30 minutes. Strain the liquid into a bowl and chill before serving.
  4. Fill a tall glass with ice and pour the syrup over it.
  5. Stir in the chilled club soda or water.
  6. Garnish with a few saffron strands.
  7. Store any leftovers in the refrigerator for up to 1 week.
