Ingredients

  • 1/2 cup honey (or white granulated sugar)
  • 1/2 cup water
  • 4 oz strawberries, chopped
  • 4 oz kiwi fruit, peeled and chopped
  • Ice
  • 1.50 oz gin
  • 1.50 oz strawberry kiwi syrup
  • 4 oz tonic water
  • Fresh strawberries, kiwi, or limes to garnish

Instructions

  1. In a medium-sized saucepan, combine honey (or sugar), water, chopped strawberries, and kiwi. Bring to a boil over high heat, then reduce to a gentle simmer.
  2. Let the mixture simmer for 20 minutes, stirring occasionally, until the fruit breaks down and the strawberries become less vibrant.
  3. Strain the syrup through a fine mesh strainer to remove the fruit solids. Discard the fruit and transfer the syrup to another container to cool.
  4. Fill a tumbler glass with ice, then pour in the gin followed by the strawberry kiwi syrup.
  5. Top up the glass with tonic water and garnish with extra fruit as desired. Enjoy!
