Ingredients
- 1/2 cup honey (or white granulated sugar)
- 1/2 cup water
- 4 oz strawberries, chopped
- 4 oz kiwi fruit, peeled and chopped
- Ice
- 1.50 oz gin
- 1.50 oz strawberry kiwi syrup
- 4 oz tonic water
- Fresh strawberries, kiwi, or limes to garnish
Instructions
- In a medium-sized saucepan, combine honey (or sugar), water, chopped strawberries, and kiwi. Bring to a boil over high heat, then reduce to a gentle simmer.
- Let the mixture simmer for 20 minutes, stirring occasionally, until the fruit breaks down and the strawberries become less vibrant.
- Strain the syrup through a fine mesh strainer to remove the fruit solids. Discard the fruit and transfer the syrup to another container to cool.
- Fill a tumbler glass with ice, then pour in the gin followed by the strawberry kiwi syrup.
- Top up the glass with tonic water and garnish with extra fruit as desired. Enjoy!
