Ingredients
- 2-3 tablespoons strawberry orange ginger syrup
- 1.50 ounces sparkling water and/or champagne
- 2 ice cubes
- 1/4 orange slice, 1/2 hulled strawberry, and a sprig of mint, for serving

- In a small saucepan over medium heat, combine strawberries, fresh ginger, orange peel, honey, orange juice, water, and a pinch of sea salt.
- Bring the mixture to a boil, then reduce the heat and simmer for about five minutes until the liquid turns a bright pinkish-red and the strawberries become less vibrant.
- Let the syrup cool for five minutes, then strain it through a fine-mesh strainer into a bowl, pressing on the solids to extract as much liquid as possible.
- Allow the syrup to cool to room temperature before using it in drinks, or store it covered in the refrigerator for up to a week.
- In an 8- to 10-ounce glass, add 2-3 tablespoons of syrup.
- Pour in sparkling water and/or champagne until the glass is almost full.
- Add two ice cubes and garnish with a halved orange slice, half a strawberry, and a sprig of mint.
