Ingredients

  • 1/2 cup Strong coffee (freshly brewed using 1.5 oz ground coffee per 2.5 oz water)
  • 1 cup Milk (whole milk)
  • 1 oz Dark chocolate (with 70% cocoa solids)
  • 1 tablespoon Honey
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground allspice
  • 3/4 teaspoon Ancho chili powder (or other chili powder of your choice)
  • Pinch of salt
  • Whipped cream
  • Grated chocolate
  • Ancho chili powder
  • Ground cinnamon or a cinnamon stick

Instructions

  1. Heat the milk in a pan, ensuring it doesn't reach boiling point. Remove from heat and stir in the honey, cinnamon, nutmeg, allspice, and chili powder. Allow the mixture to infuse for 15 minutes.
  2. Strain the infused milk through a piece of muslin or a nutbag, and return it to a clean pan.
  3. Chop the chocolate and add it to the pan along with a pinch of salt. Heat the mixture, stirring constantly, until the temperature reaches 70C/ 158F, then remove from heat.
  4. Brew the coffee and pour it into the pan, stirring to combine.
  5. Optionally, froth the spicy mocha drink with a steam wand, dedicated milk foamer, or stick blender.
  6. Pour the drink into warmed mugs or coffee glasses, and top with cream if desired. Garnish with grated chocolate, a sprinkle of ancho chili powder, and ground cinnamon or a cinnamon stick before serving.
