Ingredients

  • 1/2 cup honey
  • 1.50-inch fresh ginger, sliced
  • 1 or 2 jalapenos, sliced
  • Salted chili sugar, for the rim
  • 1 1/2 oz tequila
  • 1/2 oz mezcal
  • 1/2 lemon, juiced
  • 1/3 cup pomegranate or cranberry juice
  • Sparkling water to top up

Instructions

  1. In a medium pot, bring 1/2 cup water, honey, ginger, and jalapeƱos to a boil over high heat.
  2. Boil for 2-3 minutes, then remove from the heat and let it cool. This syrup can be stored in the fridge and makes enough for about 6 drinks.
  3. Combine the salt, sugar, and chili powder on a shallow plate and rim your glass, then fill it with ice cubes.
  4. In a cocktail shaker, mix 2-3 tablespoons of ginger syrup, tequila, mezcal, lemon juice, and pomegranate or cranberry juice.
  5. Add ice to the shaker and shake well, then strain the mixture into the prepared glass filled with ice.
  6. Top the cocktail with sparkling water, and garnish with mint. Enjoy!
