Ingredients

  • 3/4 to 1 habanero chile pepper
  • 2 1/4 cups water
  • 1/4 cup sugar
  • 1 medium English cucumber
  • 1 1/4 cups Saint Germain liqueur
  • 1 cup plain vodka
  • Cucumber slices, fresh mint sprigs, and/or thinly sliced fresh ginger (optional)

Instructions

  1. Remove the stem from the habanero pepper and cut it into quarters.
  2. In a small saucepan, combine the pepper, water, and sugar. Bring to a boil over medium heat, stirring to dissolve the sugar. Then, reduce the heat and simmer for 5 minutes before removing from the heat and allowing it to cool completely.
  3. Coarsely chop the cucumber and transfer it to a blender.
  4. Remove the pepper pieces and any seeds from the cooled sugar water using a slotted spoon, and discard the pepper. Add the sugar water to the blender with the cucumber, blending until very smooth.
  5. Strain the blended mixture into a glass container using a fine mesh sieve, pressing through the liquid. Discard any remaining pulp left in the sieve.
  6. Add Saint Germain and vodka to the strained cucumber liquid.
  7. To serve, fill cocktail glasses halfway with ice and add about 6 ounces of the drink to each glass. Optionally, garnish glasses with cucumber slices, fresh mint sprigs, and/or ginger slices.
