Ingredients

  • 1/4 cup long grain white rice
  • 1 1/4 cups water
  • 1 cinnamon stick
  • 1/4 cup canned pumpkin puree
  • 1/4 cup coconut cream (shake before using)
  • 2 tablespoons brown sugar
  • 1/8 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 ounce rum

Instructions

  1. In a blender, combine the rice and 1 cup of water. Blend until the rice is finely ground.
  2. Add the cinnamon stick and 1 more cup of water to the blender. Cover and refrigerate for 24 hours.
  3. Strain the rice through a cheesecloth into a pitcher, removing the cinnamon stick.
  4. In a saucepan over low heat, combine the pumpkin, coconut cream, brown sugar, pumpkin pie spice, and vanilla. Stir until smooth and slightly warmed.
  5. Add the pumpkin mixture to the rice milk and stir well.
  6. Strain the mixture through a cheesecloth for a finer texture, if desired, then add the rum.
  7. Stir to combine and serve with a cinnamon stick for garnish.
