Ingredients

  • 6 eggs, at room temperature
  • 1/2 teaspoon cream of tartar
  • 1 cup superfine sugar
  • 1/4 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 1/4 cup powdered sugar
  • 1/2 cup heavy whipping cream
  • hot water
  • 1 ounce rum
  • Nutmeg for garnish

Instructions

  1. Separate the eggs.
  2. Beat the egg whites and cream of tartar until a soft meringue forms.
  3. Gradually add the superfine sugar while continuing to beat until stiff peaks form.
  4. In a separate bowl, beat the egg yolks and 1 cup of powdered sugar until light and fluffy.
  5. Add the spices and mix for about 1 minute.
  6. Gently fold the yolk mixture into the egg white mixture.
  7. In another clean bowl, whip the heavy cream and remaining 1/4 cup powdered sugar until stiff peaks form.
  8. Fold the whipped cream into the egg mixture.
  9. Fill a mug with hot water and add 1 ounce of rum.
  10. Top with a scoop of the eggnog mixture.
  11. Garnish with a sprinkle of nutmeg.
