Ingredients

  • 1 cup whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 large egg yolk
  • 2 tablespoons sugar
  • 1/4 cup heavy cream
  • Whipped cream
  • Ground cinnamon
  • Cinnamon stick or star anise
  • 1 ounce alcohol (optional)

Instructions

  1. Separate the egg yolk from the white.
  2. In a saucepan, heat the milk, cinnamon, nutmeg, and vanilla until simmering.
  3. In a bowl, whisk together the egg yolk and sugar until pale in color.
  4. Gradually add a small amount of the heated milk to the egg mixture, whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat until slightly thickened, but do not boil.
  6. Remove from heat and stir in the heavy cream.
  7. Chill the eggnog before serving.
  8. To serve, add whipped cream, ground cinnamon, and a cinnamon stick or star anise if desired. Optionally, stir in 1 ounce of alcohol.
