Ingredients

  • 12 oz pale ale
  • 1 cup apple cider
  • 2 tbsp packed light brown sugar
  • Zest from 1 lemon
  • Juice from 2 lemons
  • 1/2 inch piece peeled ginger root, cut into 4 slices
  • 2 allspice berries
  • 1 whole clove
  • 1 cinnamon stick, plus extra for garnish (optional)

Instructions

  1. In a large nonreactive pot over low to medium-low heat, combine the ale, cider, brown sugar, lemon zest and juice, ginger, allspice, cloves, and cinnamon sticks. Avoid boiling the mixture.
  2. Cook for approximately 30 minutes, stirring occasionally, until the mixture is fragrant and thoroughly heated through.
  3. Strain the liquid, removing the solids.
  4. Pour into individual mugs and garnish with a cinnamon stick, if desired.
