Spiced Cider Ale
This warm and fragrant concoction, known as Cider Wassail, harks back to Elizabethan times when wassail was a blend of sherry, ale, and baked apples. Infused with the flavors of apple cider, pale ale, and a blend of spices, this comforting beverage is perfect for festive gatherings or cozy nights in.
Spiced Cider Ale
A warm and fragrant concoction of apple cider, pale ale, and spices, reminiscent of Elizabethan wassail.
Ingredients
- 4 cups pale ale
- 1 cup apple cider
- 2 tablespoons packed light brown sugar
- Zest from 1 lemon
- Juice from 2 lemons
- 4 slices of peeled ginger root (0.75 -inch to 1 -inch each)
- 12 allspice berries
- 6 whole cloves
- 2 cinnamon sticks, plus extra for garnish (optional)
Instructions
- In a large nonreactive pot, combine the ale, cider, brown sugar, lemon zest and juice, ginger, allspice, cloves, and cinnamon sticks over low or medium-low heat. Avoid boiling.
- Cook for approximately 30 minutes, stirring occasionally, until the mixture is fragrant and thoroughly heated through.
- Strain the mixture, discarding the solids.
- Divide the warm concoction among individual mugs and garnish with cinnamon sticks if desired.
