Ingredients
- 12 ounces pale ale
- 1 cup apple cider
- 2 tablespoons packed light brown sugar
- Zest from 1 lemon
- Juice from 2 lemons
- 1/2 to 1-inch piece peeled ginger root, cut into 4 slices
- 6 allspice berries
- 3 whole cloves
- 2 (3-inch) cinnamon sticks, plus extra for garnish
Instructions
- In a large nonreactive pot, combine the ale, cider, brown sugar, lemon zest, lemon juice, ginger, allspice, cloves, and cinnamon sticks over low or medium-low heat.
- Heat the mixture for about 30 minutes, stirring occasionally, until fragrant and thoroughly heated through. Do not let it boil.
- Strain the mixture to remove the solids.
- Divide the wassail among individual mugs and garnish with cinnamon sticks if desired.
