Ingredients

  • 12 ounces pale ale
  • 1 cup apple cider
  • 2 tablespoons packed light brown sugar
  • Zest from 1 lemon
  • Juice from 2 lemons
  • 1/2 to 1-inch piece peeled ginger root, cut into 4 slices
  • 6 allspice berries
  • 3 whole cloves
  • 2 (3-inch) cinnamon sticks, plus extra for garnish

Instructions

  1. In a large nonreactive pot, combine the ale, cider, brown sugar, lemon zest, lemon juice, ginger, allspice, cloves, and cinnamon sticks over low or medium-low heat.
  2. Heat the mixture for about 30 minutes, stirring occasionally, until fragrant and thoroughly heated through. Do not let it boil.
  3. Strain the mixture to remove the solids.
  4. Divide the wassail among individual mugs and garnish with cinnamon sticks if desired.
