Ingredients

  • 1 black tea bag
  • 4 oz boiling water
  • 1 large Asian Pear, peeled and cored
  • 4 mint leaves
  • 1.30 oz simple syrup (recipe below)
  • 3 oz sparkling water
  • 1 tbsp + 1 tsp water
  • 1 tbsp + 1 tsp sugar

Instructions

  1. Steep the black tea bag in 4 oz of boiling water for 4-5 minutes. Remove the tea bag and refrigerate the tea until chilled.
  2. Make the simple syrup by boiling equal parts water and sugar over medium heat until the sugar dissolves. Remove from heat and refrigerate the simple syrup.
  3. Purée the peeled and cored Asian pear until smooth in a blender or food processor. Strain the purée through a cheesecloth or fine metal sieve to remove any chunks.
  4. In a pitcher, combine the pear purée and muddled mint leaves. Stir in the chilled black tea and simple syrup, then return to the refrigerator until ready to serve.
  5. Just before serving, stir in the sparkling water and serve over ice.
