Ingredients

  • 1/2 oz mint tea
  • 1/2 oz St-Germain
  • 1 1/2 oz whiskey, preferably Rieger's Kansas City
  • 4 oz soda water, plus extra for topping
  • Ice
  • Fresh bay leaf for garnish

Instructions

  1. Fill a highball or Collins glass about two-thirds full with ice.
  2. Stir the ice to chill the glass, then pour out any excess water.
  3. Add the mint tea, St-Germain, and whiskey into the glass, then gently stir to combine.
  4. Pour the soda water down the side of the glass to retain the carbonation.
  5. Add more ice and top with a final splash of soda water.
  6. Express the lemon peel over the drink, then discard.
  7. Garnish the cocktail with a fresh bay leaf.
