Ingredients

  • 3 tbsp coarse pink salt
  • 2 oz Mezcal
  • 1.50 oz pink grapefruit juice (freshly-squeezed)
  • 1 oz lime juice (freshly-squeezed)
  • 1 oz simple syrup
  • 1 tbsp Aperol
  • 1 sprig fresh rosemary

Instructions

  1. Rub the rim of the glass with grapefruit juice and dip it into the coarse pink salt to coat the rim.
  2. In a cocktail shaker, combine the mezcal, pink grapefruit juice, lime juice, simple syrup, and Aperol with ice.
  3. Shake vigorously for about 20 seconds, then strain the cocktail into a chilled glass.
  4. Light a sprig of fresh rosemary, extinguish the flame, and place the smoking sprig in the glass for aroma and presentation.
