Smoky Rosemary Mezcal Paloma
A smoky and refreshing mezcal cocktail with pink grapefruit, lime, and a hint of bitterness, finished with a smoking rosemary sprig.
Ingredients
- 3 tbsp coarse pink salt
- 2 oz Mezcal
- 1.50 oz pink grapefruit juice (freshly-squeezed)
- 1 oz lime juice (freshly-squeezed)
- 1 oz simple syrup
- 1 tbsp Aperol
- 1 sprig fresh rosemary
Instructions
- Rub the rim of the glass with grapefruit juice and dip it into the coarse pink salt to coat the rim.
- In a cocktail shaker, combine the mezcal, pink grapefruit juice, lime juice, simple syrup, and Aperol with ice.
- Shake vigorously for about 20 seconds, then strain the cocktail into a chilled glass.
- Light a sprig of fresh rosemary, extinguish the flame, and place the smoking sprig in the glass for aroma and presentation.
