Ingredients

  • 2 oz gin
  • 1 pasteurized egg white
  • 3 drops orange flower water
  • 1/2 oz cream
  • 1/2 oz fresh lemon juice
  • 1/2 oz fresh lime juice
  • 1/2 oz simple syrup
  • Ice cubes
  • Splash of soda water
  • 1 strawberry or a lime wheel
  • Grating of fresh nutmeg (optional)

Instructions

  1. If shaking by hand, combine gin, egg white, orange flower water, cream, lemon juice, lime juice, and simple syrup in a cocktail shaker.
  2. Cover and shake vigorously for about a minute, then add 4-5 ice cubes and continue shaking until well mixed.
  3. Strain the drink into a chilled cocktail glass.
  4. Pour a splash of soda water back into the shaker to dislodge any remaining foam, then pour into the top of the fizz. Use a spoon to collect all the foam.
  5. If using a blender, blend gin, egg white, orange flower water, cream, lemon juice, lime juice, and simple syrup on high for 30 seconds.
  6. Add about 4 cubes of ice and blend on high for at least a minute, or until a good foam forms.
  7. Pour into a chilled cocktail glass.
  8. Pour a splash of soda water back into the blender to dislodge any remaining foam, then pour into the top of the fizz. Use a spoon to collect all the foam.
  9. Garnish the rim of the glass with a sliced strawberry or lime wheel. (Note: Some recipes call for nutmeg garnish, but a fresh piece of fruit is preferred.)
