Ingredients
- 1/8 cup diced pineapple chunks
- Zest and juice of 1/4 blood orange
- Zest and juice of 1/4 lemon
- 1 tablespoon granulated sugar
- 1 cardamom pod
- 1/4 cinnamon stick
- 1/4 star anise
- 1/4 whole clove
- 3 coriander seeds
- 1 tablespoon brewed hibiscus tea
- 1/4 cup boiling water
- 1/8 cup St-Rémy Signature
- 1/4 cup Mount Gay Black Barrel Double Cask Blend
- 1/8 cup white rum
- 1/8 cup Pernod
- 1/2 cup whole milk
- Garnish: hibiscus flower in syrup
Instructions
- In a mixing bowl, muddle the pineapple, lemon zest and juice, blood orange zest and juice, sugar, and spices.
- Add the hibiscus tea and boiling water, and stir until the sugar is dissolved.
- Mix in the spirits and stir well.
- In a separate bowl, pour the whole milk.
- Pour the punch mixture into the milk and stir until the mixture curdles.
- Let it sit for about 30 minutes, then strain through a fine mesh sieve.
- Clean the sieve and line with a coffee filter or cheesecloth, then strain the mixture again to achieve a clear consistency.
- Transfer the clarified milk punch to bottles or jars and refrigerate.
- Pour into a rocks glass over one large ice cube and garnish with a hibiscus flower in syrup.
