Ingredients

  • 1 Black tea bag
  • 1 Green cardamom pod
  • 3 thin slices of ginger (1 mm thick)
  • 1/2 Cinnamon stick (5 cm long)
  • 1 Clove
  • 1/4 tsp Black peppercorns
  • 1/4 Star anise
  • 1/8 tsp Fennel seeds
  • 1/8 tsp freshly grated Nutmeg
  • 1/2 Vanilla pod (split lengthways)
  • 1/2 cup Water
  • 1-2 tsp Light brown sugar
  • 1/2 cup Whole milk
  • 1 1/2 tbsp Dark rum

Instructions

  1. Place the ginger, vanilla pod, whole spices, and tea bag in a saucepan.
  2. Pour in the water and cook over moderate heat for 10 minutes.
  3. Add the milk and 1-2 tsp sugar, then bring to a boil and simmer gently for 20 minutes.
  4. Stir and taste, adjusting sugar if necessary.
  5. Strain the tea and serve with 1 1/2 tbsp rum per serving.
  6. Garnish with cinnamon and/or star anise.
