Ingredients

  • 2/3 cup caster sugar
  • 1 1/4 cups water
  • 4 Earl Grey tea bags
  • 1 2/3 cups gin
  • 2 1/2 tbsp elderflower cordial
  • 4 1/4 cups soda water
  • Juice of 3 lemons
  • 1-2 tsp Angostura bitters
  • 1 lemon, cut into wedges
  • 4 nectarines, cored and sliced
  • Edible flowers (to serve)

Instructions

  1. In a saucepan, heat the sugar and 1 1/4 cups water, stirring until the sugar dissolves.
  2. Bring the mixture to a boil, then remove from heat and add the Earl Grey tea bags. Allow the tea to steep for 30 minutes, then squeeze the bags and discard them.
  3. Pour the cooled syrup into a bowl, then add the gin, elderflower cordial, soda water, lemon juice, and Angostura bitters to taste.
  4. Stir in the lemon wedges, sliced nectarines, and plenty of ice. Adjust to taste.
  5. Before serving, garnish with edible flowers.
