Ingredients

  • 2 oz demerara rum
  • 1 oz lime juice
  • 3/4 oz rich demerara sugar syrup
  • Small handful of mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs for garnish
  • Crushed ice

Instructions

  1. Prepare the rich demerara sugar syrup by simmering 2 cups of demerara sugar with 1 cup of water until dissolved, then let it cool completely and store in the refrigerator.
  2. In a cocktail shaker, muddle mint with lime juice and rich demerara sugar syrup.
  3. Add demerara rum to the shaker, shake briefly, and pour into a tall glass or tiki mug.
  4. Press the mint into the bottom of the glass and fill with crushed ice.
  5. Use a barspoon or swizzle stick to gently twirl the drink until frost forms on the glass.
  6. Add 2-4 dashes of Angostura bitters and top with additional ice.
  7. Garnish with a generous bouquet of mint and enjoy!
