Ingredients

  • 2 oz Gin
  • 1/4 oz Lemon Juice
  • 1/2 oz Rosemary Simple Syrup
  • 1 Egg White
  • Sparkling water to top it off
  • Rosemary sprig to garnish
  • 1/4 Cup Sugar
  • 1/4 Cup Water
  • 2 Sprigs of Rosemary

Instructions

  1. Start by making the rosemary simple syrup. In a small saucepan, combine sugar and water over medium heat until the sugar dissolves.
  2. Add in the rosemary, stir over medium-low heat for 5 minutes, then remove from heat and let the syrup seep for 10 minutes.
  3. Pour the gin, lemon juice, rosemary simple syrup, and egg white into a cocktail shaker and shake for 30 seconds until foamy.
  4. Add ice to the shaker and shake for an additional 30 seconds.
  5. Fill a glass with ice cubes and pour in the cocktail.
  6. Top it off with sparkling water and garnish with a rosemary sprig.
