Ingredients

  • 2 oz Gin
  • 1/4 oz Lemon Juice
  • 1/2 oz Rosemary Simple Syrup
  • 1 Egg White
  • Sparkling water, for topping off
  • Rosemary sprig, for garnish
  • 1/4 Cup Sugar
  • 1/4 Cup Water
  • 2 Sprigs of Rosemary

Instructions

  1. In a small saucepan, combine sugar and water over medium heat, then add the rosemary. Stir over medium-low heat until the sugar has dissolved, then remove from heat and let the simple syrup infuse for 10 minutes.
  2. In a cocktail shaker, combine gin, lemon juice, rosemary simple syrup, and egg white. Shake vigorously for 30 seconds until the egg white becomes foamy.
  3. Add ice to the shaker and shake for an additional 30 seconds.
  4. Fill a glass with ice, then strain the cocktail into the glass.
  5. Top it off with sparkling water and garnish with a sprig of rosemary.
