Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 2 tbsp granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 8 large egg yolks
  • 1 cup white rum or aguardiente

Instructions

  1. In a food processor, blend almonds and 2 tablespoons of sugar into a fine paste.
  2. In a large saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes on medium-low heat.
  3. In a large bowl, whisk egg yolks, remaining 1 1/2 cups sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk mixture, discard.
  5. Slowly add the milk to the yolk mixture while whisking constantly.
  6. Return the mixture to the pan and cook over low heat, stirring constantly, until thickened (about 5 to 7 minutes).
  7. Let the mixture cool completely for about 2 hours, then stir in the rum or aguardiente. Serve and enjoy!
