Rompope Royale

Ingredients
- 2/3 cup blanched almonds
- 1.50 cups granulated sugar
- 6 cups whole milk
- 2 cinnamon sticks
- 1 lemon rind
- 1 tsp pure vanilla extract
- 1/4 tsp baking soda
- 8 large egg yolks
- 1 cup white rum or aguardiente
Instructions
- In a food processor, grind almonds and 2 tablespoons of sugar into a fine paste.
- In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
- In a bowl, whisk egg yolks, remaining sugar, and ground almonds until thick and pale.
- Remove cinnamon and lemon rind from the milk mixture.
- Slowly add the milk to the yolk mixture, whisking constantly.
- Return the mixture to the pan and cook over low heat until thickened, about 5 to 7 minutes.
- Cool the mixture completely for about 2 hours, then stir in rum or aguardiente. Serve.
