Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 8 large egg yolks
  • 1 cup white rum or aguardiente

Instructions

  1. In a food processor, grind almonds and 2 tablespoons of sugar into a fine paste.
  2. In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes.
  3. In a bowl, whisk egg yolks, remaining sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk mixture.
  5. Slowly add the milk to the yolk mixture, whisking constantly.
  6. Return the mixture to the pan and cook over low heat until thickened, about 5 to 7 minutes.
  7. Cool the mixture completely for about 2 hours, then stir in rum or aguardiente. Serve.
