Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 8 large egg yolks
  • 1 cup white rum (or aguardiente)

Instructions

  1. Blend almonds with 2 tablespoons of sugar until smooth.
  2. In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer.
  3. In a bowl, whisk egg yolks, remaining sugar, and ground almonds until thick and pale.
  4. Slowly add the milk to the yolk mixture while whisking constantly.
  5. Return mixture to the pan and cook over low heat until thickened.
  6. Let it cool, then stir in rum. Serve.
