A rich and creamy traditional Mexican holiday drink with hints of almonds, cinnamon, and vanilla, topped off with a touch of rum.
Ingredients
- 2/3 cup blanched almonds
- 1.50 cups granulated sugar
- 6 cups whole milk
- 2 cinnamon sticks
- 1 lemon rind
- 1 tsp pure vanilla extract
- 1/4 tsp baking soda
- 8 large egg yolks
- 1 cup white rum (or aguardiente)
Instructions
- Blend almonds with 2 tablespoons of sugar until smooth.
- In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer.
- In a bowl, whisk egg yolks, remaining sugar, and ground almonds until thick and pale.
- Slowly add the milk to the yolk mixture while whisking constantly.
- Return mixture to the pan and cook over low heat until thickened.
- Let it cool, then stir in rum. Serve.
